Garlic Chives

Gui Chai

The garlic chives that are used in Thai and Chinese cuisine are a little more robust and flavoursome than its Western strain. In fact, it is a vegetable in itself and is often cooked with another, perhaps blander vegetable such as bean sprouts, as a side dish. The white slightly bulbous root is not used and the chives are cut into 1 inch lengths. Needing very little cooking, this strongly flavoured vegetable is added to popular Phad Thai noodles.
