Made from salted and dried krill or shrimp, shrimp paste is an essential ingredient in Thai and Southeast Asian cooking. Ranging from a light pink sauce to a dark brown slab (depending on it source country) the one thing in common is its pungent smell. In Thailand shrimp paste is brown in colour and is usually pounded together with onions and chillies before adding to the cooking pot.
