Palm Sugar

Nam Taan Peep


This light brown sugar is made from the sap of the sugar palm tree. Hardened into blocks is it used in many Thai dishes. Not to be confused with the Malaysian or Indonesian version (gula melaka or jaggery), this caramel like sugar is quite crumbly and very sweet, so use sparingly. Added to a curry it helps counteract the chilli heat. A suitable alternative is soft light brown sugar.
