Even experienced cooks use tinned bamboo shoots as preparing and cooking fresh shoots can be a long and laborious process. Tinned shoots are already cooked and only need to be drained and rinsed (and in some cases cut up) before added to food. In Thai cuisine bamboo shoots can be added to curries.
