Cumin leaves are used in the very hot, exotic Jungle Curry (Kaeng Paa), a regional dish from central Thailand. Originally made with wild boar meat, nowadays pork or chicken is used. Also popular is Fish Jungle Curry. Cumin seeds are pan roasted, ground and added to curry pastes, especially in the South of Thailand where the cuisine is influenced by it proximity to Malaysia and Burma.
